Each pack seasons up to 25 lbs of meat, perfect for consistent, delicious results every time. It’s an ideal choice for those who appreciate the art of sausage making and the joy of sharing great food with friends and family.
Suggested Directions For Use:
1.Course grind 25 lbs. of meat through 1/2″ plate.
2. Transfer to mixer, add seasoning, 1 oz. Tinted Curing Salt (6.25% Sodium Nitrite), and up to 2.5 lbs. of water.**
3. Mix for 6 to 8 minutes, until the meat is “tacky’.
4. Regrind through 3/16” plate.
5. Stuff into casings. Once stuffed, process the sausage through a smokehouse until the internal temperature of the meat has reached 155* F.
**To get the signature “tang flavor” common in fermented sausages, add Starter Culture or Encapsulated Citric Acid (3 oz. per 25 lbs. of meat) to your meat block after both grinds are completed and prior to stuffing.
