Cheeseburger Scalloped Potatoes
1/2 lb ground beef
3 cups whole milk
1 1/2 cups soup starter mix
1/2 cup shredded sharp white cheddar cheese
3 lbs red potatoes
Salt and pepper to taste
Optional: 1 Tbsp fresh parsley, minced
Preheat oven to 350 degrees. Spray a 13″x9″ baking dish with nonstick cooking spray. Brown ground beef in a medium saucepan over medium heat. Drain. Add milk. Add soup starter mix while whisking vigorously. Bring to a light boil over medium high heat, stirring frequently. Once mixture begins to boil, remove from heat and stir in cheese. Season with salt and pepper to taste. Cover pan with lid and set aside.
Peel potatoes and cut into 1/6″ slices. Spread half of the potatoes into an even layer in baking dish, ensuring slices do not overlap. Pour half of the sauce mixture evenly over potato slices. Layer remaining potatoes over top of potatoes and sauce in the baking dish. Pour remaining sauce evenly over the newly layered potatoes. Bake in preheated oven until potatoes are fork-tender, about 55-70 minutes. Garnish with parsley, if desired.
